Winter Warmer Recipe – Honey Garlic Chicken and Veggie Stir Fry

With weather dropping to -40 degrees lately a cozy dinner at home may seem like a better option then venturing out. Try this delicious and simple recipe for your next meal and avoid the blizzard at your doorstep.

The recipe will serve 4 but your own serving sizes may vary depending on your appetite or if your looking for leftovers!  Use your personal judgment and double or add extra veggies to the mix when needed.



Ingredient List

  • 1 lb Boneless Skinless Chicken Breasts

(V) Substitute with one block of hard tofu drained and chopped

  • ½ Cup Low sodium Chicken Broth

(V) Substitute with Vegetable Broth

  • 1.5 Cups Whole Grain Rice, Brown Rice or Quinoa
  • 1 tbsp Olive Oil
  • 1 tsp Cornstarch
  • 2 tbsp Honey
  • ¼ cup Low sodium Soy Sauce or Tamari
  • 2 cups Broccoli
  • 4 cloves Garlic
  • 1 large Red bell Pepper
  • 2 Large Carrots


Optional Veggies and Ingredients

  • Water Chestnuts, Cashews, Pineapple, Onion, Mushrooms, Sesame Seeds, Hot Sauce




  1. Start cooking Rice according to package (45 mins) or Quinoa (15 mins)
  2. Cube Chicken Breasts
  3. Slice red peppers and carrots into strips
  4. Cut up broccoli
  5. Mince Garlic
  6. Mix the Soy Sauce, Honey and Broth in a bowl



  1. Cook the chicken in a large frying pan at medium- high heat in the Olive Oil, as it is partially cooked and begins to brown (4 minutes) add the garlic.
  2. After about 1 minute add the broccoli, peppers and carrots
  3. Mix and Stir for about 5 minutes until the veggies begin to soften
  4. Stir in the Sauce mixture you made above (can add more if you like it saucy)
  5. Then to finish, add Cornstarch mixed with a teaspoon of water to the pan
  6. Stir for 2 more minutes until the chicken is fully cooked and the sauce is sticking to it
  7. Place Stir fry over Rice and Serve- sprinkle with sesame seeds to finish and serve
