For Ottawa’s culinary community the recent Canadian Culinary Championship brought the heat and some well earned recognition. Representing Ottawa, the Stofa Restaurant co-owner Jason Sawson earned a bronze medal, a milestone that celebrates his creativity in the kitchen as well as his deep roots in the Ottawa culinary scene.
The championship was a two day national contest that tested ten of Canada’s most distinguished chefs. The chefs faced a series of challenges that tested everything from technical skill, to flavour pairing, and composure under pressure.
Sawision had a long journey to qualify for the Canadian Culinary Championship. He earned his spot last fall by winning Ottawa’s regional Great Kitchen Party competition, which was then followed by months of refining the grand finale creation.
The dish that took bronze was seared scallops served with adobo, taro aji amarillo fritters, mango salsa, chorizo shrimp toast, and a poblano pepper sauce. The complex and equally refined flavours made him a crowd favourite and drew in some of the longest lines of the evening leaving a lasting impression on both judges and diners alike.
Sawision opened Stofa on Wellington street after years of experience in professional kitchens, and for him the podium finish is a testament to his artistic ambition and teamwork. He ensured to credit his sous chef and supporting team for helping him bring his vision to life in one of Canada’s most demanding culinary showcases.
Sawision’s success goes beyond a personal achievement, it also brings another spotlight on Ottawa’s reputation as a place of exceptional culinary talent.
