3 Easy St. Patrick’s Day Desserts

St. Patrick’s Day is always a fun theme day to participate in, whether you’re doing crafts with your kids, going out to a pub with your friends, or hosting a gathering at your own place. The big weekend is already here, and if you haven’t planned out what to bring to that potluck or an easy recipe to keep the little ones busy, don’t stress! We’ve got you covered with some last minute ideas to whip up in no time.

Lucky Charms Marshmallow Treats

 

Marshmallow squares are the easiest “throw-together” treat you can possibly think of. Spoil your friends and family with a fun twist on this classic dessert. All you need is:

  • 5 cups of mini marshmallows
  • 4 tbsp butter
  • 6 cups Lucky Charms cereal

Melt the butter over low heat and add marshmallows while stirring frequently. Add the cereal, then remove from heat. Spray a 9×13 pan with non stick spray and spoon the mixture into pan. Allow to cool until hardened, then cut into squares and serve.

Green Velvet Cupcakes

Cupcakes are a hit at any party. Plus, you can get extra creative with sprinkles or candy decorations on top. What you’ll need:

  • Box of vanilla cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • A few drops of food colouring
  • Your favourite icing

Preheat your oven to 350, and follow the easy directions on the box, depending which brand you purchased. Use cupcake baking cups, mix the ingredients (minus the icing), pour in the batter and bake immediately. Cupcakes should be finished after about 18 minutes, but use the clean toothpick test to be sure. Let cool and top with icing (mixed with food colouring) and any additional decorations.

 

Dipped Oreos

This is a great one to try if you have a few kiddos at home and the ingredients are probably already in your cupboard. You could also try this with strawberries or sugar cookies! Ingredients:

  • Box of oreos
  • Chocolate melts (green or white)
  • Sprinkles for decoration

An easy three step process simply includes melting the chocolate, dipping the oreos, and topping with sprinkles. Pop them in the freezer for 30 mins to harden, and enjoy.
