Artist in Residence Distillerie is redefining Canadian spirits with its innovative approach and commitment to quality. Established in 2016 by entrepreneur Pierre Mantha, the distillery has grown into a 30,000-square-foot operation, housing two powerful stills capable of producing 9,000 liters of alcohol. Every stage of production is handled onsite using pristine spring water drawn from the distillery’s underground well.

AiR produces a wide range of gins, vodkas, liqueurs, and whiskies, but its latest release, Smoked Maple Whisky, is poised to make waves. Launched at the LCBO this October, the whisky is priced at $35 and crafted to appeal to a new generation of whisky enthusiasts. Its balanced flavor profile marries the rich sweetness of maple with an enticing smoky finish, making it suitable for sipping neat or mixing into cocktails like the Smoked Maple Whisky Sour.

“With our Smoked Maple Whisky, we aim to become Ontario’s biggest artisanal whisky producer,” says Mantha. “This is only the beginning of our journey.”

The Gatineau facility serves as both a production hub and a destination for spirit enthusiasts. Visitors are welcomed into a boutique featuring the distillery’s full inventory, while the upper levels offer tasting experiences designed for those passionate about artisanal spirits.
